I love vegetables. I really do.
One of my favourite meals is a giant salad. Yes, vegetarians really do have salads as a meal, but not the wimpy kind you’re thinking of. For a salad to be a meal, it needs to be flavourful and filling. The more ingredients, the better. That’s why I’m calling this a Super Salad.
I never follow a recipe when making a salad, half the fun is experimenting with new combinations of the freshest seasonal ingredients. This Super Salad has four different types of lettuce, cooked mushrooms, cucumber, tomatoes, raisins, sprouts, lentils, walnuts, sweet potato, parsley and hemp hearts. And to tie it all together, some home made miso dressing. The dressing was fabulously tangy. Again, I didn’t use a recipe, but next time I make it I will try to measure and let you know.
These are just some of the nutrients found in this salad. The dressing is a nutrient powerhouse in itself with miso paste, raw apple cider vinegar, raw honey, olive oil and sesame oil.
Not only is this a dish that pleasing on the eyes, but also nourishing for the body. Mmm
